Meet the Chef
Before graduating, Jorge completed a culinary internship in San Sebastián, Spain, where he refined his approach to ingredient-driven cooking and learned the importance of simplicity, seasonality, and allowing exceptional products to speak for themselves. Following graduation, he continued his culinary journey in the United States with the Hyatt Regency Atlanta, gaining experience across multiple hotel outlets, including Atlanta’s iconic Polaris restaurant.
Over the years, Jorge has worked throughout the United States in states including Florida, Vermont, Pennsylvania, and Maine, building experience in high-volume kitchens, hotel dining, and team leadership. Most recently, he served as Sous Chef at Earth at Hidden Pond in Kennebunkport, where his passion for elevated coastal cuisine and seasonal ingredients continued to grow.
Now serving as Executive Chef of Harbor Bistro + Terrace, Jorge brings a modern coastal style with subtle global influences, centered around seasonality, fresh ingredients, and approachable yet refined dishes. He believes exceptional dining starts with exceptional products, valuing quality over quantity and creating experiences that make guests feel welcomed, excited, and connected through food.
Chef Jorge is passionate about teamwork, mentorship, and fostering a positive kitchen culture where creativity and collaboration thrive. When he’s not in the kitchen, he can often be found outdoors with his husband Patrick—hiking, boating, relaxing at the beach, or enjoying a great açaí bowl along the Maine coast.
